Yesterday was the first day of spring, and one of my favorite warm-weather desserts or additions to breakfast is a simple fruit salad. I’m going grocery shopping today, so I think I might pick up some extra fruit to make one!
Here’s what you need:
Assorted fresh fruits, chopped (I like peaches, apples, pears, bananas and grapes, or to make a “theme” salad with berries or tropical fruits. Anything goes, so you can just use whatever you have in your kitchen.)
1-2 tbsp. room-temp honey, depending on how sweet you want your salad (I would use less if you’re including banana.)
A squeeze of fresh lime
Here’s how to make it:
Throw all of your chopped fruit into a large bowl, and turn to mix. Mix your honey and lime juice together well and drizzle over the salad. Turn again to mix. The lime will help preserve the prettiness of your fruit, keeping it from oxidizing quickly. You may want to wait until after you’ve added the juice/honey mix to add more “delicate” fruits, like bananas. You can also add canned fruits, but I would only recommend pineapple. Canned fruits just don’t have the same color, texture, or taste as fresh.
This salad is even better after it’s set. You can eat it right away, or put it in the fridge for an hour or two to let the flavors combine a little. Yum!
